White, instead of kicking that knight out of g4, could've played 1. exd6 Nf6 2. e5 Ne8 3. e6! with advantage to White e.g. 3... Qxd6 4. exf7+ Kh8 5. Ba3 when White gets the material he sacrificed back,and then some.
