No you don't have to use salt to make gluten. Mine is always has no salt added due to CHF issues in the family.

Be aware of gluten. It is very harmful to the human body. It can cause bloating, gut inflamation and even cancer. I`ve been living without gluten for a few months now and feel like a new person and no, I don`t have celiac disease.
